Break the Rules with “Royal Smushi”

“There are no longer any rules or norms,” say Lo Østergaard and Rud Christiansen. The dynamic duo focus on ‘smushi’, Danish ‘smørrebrød’ served in delicate, aesthetically presented portions, inspired by the Japanese delicacy, sushi, at The Royal Café and in their coffee table/cookbook, “Royal Smushi”.

“Our philosophy is to combine gastronomic experiences with Scandinavian design classics from the baroque era to the present day. There are no longer any rules or norms,” say entrepreneurs Lo Østergaard and Rud Christiansen, as they present their coffee table/cookbook, “Royal Smushi”.
The enterprising couple are conquering the world with their fabulous designer cafés, The Royal Café, opening outlets in Copenhagen, Tokyo and Beijing (the Copenhagen branch is a five minute walk from Restaurant Kronborg).
They have joined forces with Danish-born, Asian-trained chef, Frederik Jensen, focusing on Danish cuisine with their ‘smushi’.  ‘Smushi’ is Danish ‘smørrebrød’ (the famous open-faced sandwiches on dark rye bread) served in delicate, aesthetically presented portions, inspired by the Japanese delicacy sushi. In “Royal Smushi” the trio presents the fabulous interiors of the cafés alongside hands-on recipes for the most beautiful, and yummy, smushi.
